Garlic Sweet Potato Fries

Although the Super Bowl outcome wasn’t what I’d hoped for (I’m a Manning fan, through and through), that doesn’t mean I wasn’t delighted (as usual) with the snacks and pulled pork we surrounded ourselves with this year.

I wanted to post a delicious recipe I made for this year’s Super Bowl, one that I found on a blog called How Sweet It Is. This recipe is surprisingly healthier than many other Super Bowl recipes, and I urge you to try it for any occasion. After all, it’s tried, tested and got me through the worst Super Bowl I have witnessed since all of the Bills vs. Dallas games growing up.

ingredients:

3 large sweet potatoes, peeled (if desired) and sliced into thin 1/2-inch (thick) strips
3 tablespoons olive oil
2 tablespoons unsalted butter (*I used margarine instead*)
3 garlic cloves finely minced or pressed
1/2 teaspoon coarse sea salt (*I used pink Himalayan sea salt*)
1/2 teaspoon pepper
1/2 cup finely grated parmesan cheese
3 tablespoons freshly chopped parsley
3 tablespoons freshly chopped cilantro (*I used one and a half tablespoons less than the cilantro the recipe requests, as it is a strong flavor*)
3 tablespoons freshly chopped basil

creamy feta dip
8 ounce feta block, crumbled
3/4 cup full-fat or 2% plain Greek yogurt
2 tablespoons mayonnaise (*You can use low fat or olive oil mayo, or no mayo at all*)
1/2 teaspoon salt (*I used fresh sea salt*)
1/4 teaspoon pepper
1/4 teaspoon smoked paprika
1/4 teaspoon garlic powder
